Bianchetto Truffle: Perfume, Flavour and Tradition

The Bianchetto Truffle, also known as marzuolo truffle, belongs to the same family of the White Truffle, but this variety reaches maturity in March, as the name “marzuolo” suggests. The Bianchetto Truffle stands out for its pungent notes, both in smell and taste. The Bianchetto Truffle is used in many important restaurants as excellent, but if eaten raw in large quantities, it is poorly digestible, a bit like the red onion of Tropea. The white truffle is the species par excellence used by truffles that train puppies in search of the truffle, then arrive in September/ October with dogs ready for the most coveted hunt: the White Truffle of San Miniato. The white truffle season is ideal for this type of training, since it usually does not reach very large sizes (in fact, they are rather small) but more common than the White Truffle. In addition, unlike the white truffle, it grows on the surface of the soil, this makes it easily detectable by unexperienced puppies. Bianchetto is not among the best-selling species in the world, but it is highly appreciated by restaurants in central and southern Italy.
