AUTUMN TRUFFLE
Tuber Uncinatum Chatin
The Autumn Truffle (Tuber uncinatum Chatin), has a skin ranging from very dark brown to black, with small warts that make it look very similar to the Summer Truffle, from which it stands out for the period of maturation.
The harvest in Tuscany goes from October 1st
to December 31st, is therefore defined as a late truffle.
It is a truffle with intense flavor and aroma with hints of hazelnut, a characteristic that makes it a species that is well suited to various uses, consumed both raw and cooked.
