WHITE TRUFFLE CREAM WITH TUSCAN CANTUCCINI

INGREDIENTS FOR 4 PEOPLE

custard 250 g
white chocolate 100 g
whipped cream 130 g
Fresh White Truffle 20 g

METHOD

Prepare the custard. When temperature’s down to 50°C mix with chopped white chocolate. Let cool the cream and gently add the whipped cream and Selektia White Truffle Olive Oil or some of Fresh White Truffle finely grated. Let rest in refrigerator for a few hours so that truffle aroma will spread in the mixture. Place some broken Tuscan Cantuccini in a glass or cup, put the cream on, then truffle gills and one or two Tuscan Cantuccini on top.
