Always loved for their unmistakable scent and flavour, porcini mushrooms lend themselves to many preparations. Thanks to their versatility, porcini mushrooms can be eaten raw, thinly sliced, with just a drizzle of oil, but also in meat, fish and pasta dishes.
Below you will find our tips on how best to clean porcini mushrooms.
Using a smooth-bladed knife, gently scrape the soil from the base of the stalk to remove it from the porcini.
Once you have finished the previous operation, use a cotton cloth to remove any remaining earth from the cap.
If the mushroom is still very dirty, run it under running water and dry it immediately (this last operation should only be carried out if it is really necessary).
Proceed with the desired preparation.
