Start by grating the lemon zest onto the cream cheese and squeezing out some of the lemon juice. Add two tablespoons of sugar and mix everything together. This will give the cheese a citrus freshness that will make irresistible. Now it’s time to give the cheese a light and fluffy texture: add the cream semi-whipped, which must be in a proportion of one third of the cheese. Mix vigorously until a smooth and homogeneous cream is obtained. Let’s now move on to preparing the crunchy base: crumble some shortbread biscuits and add a little of Selektia Truffle and Fig Delight. Mix well to evenly distribute the flavors. Take some moulds and place the biscuit mixture with fig jam inside them, pressing lightly to form the base. Add a layer of two tablespoons of cream cheese and carefully level the surface. Continue with another layer of Truffle Fig Delight, smoothing the surface well for a flawless appearance. Now, carefully remove the moulds, revealing your cream cheese cups and the Truffle Fig Delight, ready to be enjoyed! To finish this dessert in style, grate a little lemon zest on top of each little glass. This will give a touch of freshness and aroma that will make the dish even more delicious and inviting. Done! Prepare the three cheeses and arrange them on a tray. Place them in the oven preheated to 240°C for about 3 minutes, until melted and lightly golden. Meanwhile, heat a small skillet to create the parmesan wafers. When the pan is hot, let the parmesan fall evenly. Once the parmesan is cooked and slightly golden at the edges, use tongs to create wafers, paying attention not to break them. Remove the three cheeses from the oven and place the parmesan wafers on top of them, to give a pleasant crunchiness to the dish. To top it all off, add a spoonful of Selektia Truffle Fig Delight to each cheese and a hint of rosemary for a touch of freshness and aroma. Done! Your dish is ready to be enjoyed. Enjoy your meal!
