Tuber Albidum Pico o Tuber Borchii Vitt.is a variety of Truffle, less valuable and therefore less expensive than the classic White Truffle (Tuber magnatum Pico)
It is found on the sea level, typically in symbiosis with the domestic pine and the maritime pine.
It can be found in good quantities inside the oak woods with a temperate climate, sometimes exceeding even the 1,000 metres of altitude.
The collection calendar in Tuscany opens on January 10th and ends on April 30th.
Popularly known also with the term Marzuolo Truffle,
because it is in March that sees its complete maturation,
The Bianchetto Truffle can be used grated fresh, or cut into chunks using the classic truffle slicer.
It can accompany both meat dishes and rich appetizers, such as bruschetta with butter and pepper.
It should not be cooked.
It has a strong aroma and it’s a little spicy, but in some preparations can represent a valid and above all economic alternative to the better known brother, more prestigious and above all more expensive.
