Onion and truffle delight
A genuine Red Onion Jam with Summer Truffle (Tuber aestivum Vitt.) with a sweet and delicate flavour. The perfect balance to enrich the cheese tasting but also to use it as a dressing sauce for grilled meat, chicken or turkey.

Onions, sugar, modified starch, gelling agent: pectin, summer truffle (Tuber aestivum vitt.) 1% , flavouring. Fresh onions used 75 g per 100 g of finished product.

In a container, mix the beer and soy sauce to create the marinade. Place the duck breasts in the marinade, making sure they are completely submerged. Cover the container and leave to marinate in the refrigerator for at least 30 minutes. Meanwhile, rinse the rice under running water until the water runs clear. Place the rice and water in a pot and boil them. Then reduce the heat to low and cover the pot with a lid and leave to cook for 7-8 minutes or until the rice is cooked and the water has completely withdrawn, after turning off the heat, leave the covered rice to rest for another 5 minutes. Drain the duck breasts from the marinade and dry them slightly to remove excess liquid. Heat a pan with a little olive oil over medium-high heat. Sear the duck breast slices in the pan on both sides and form quenelles with the cooked rice. Place the rice quenelle on top, garnish with Selektia Truffle Onion Delight
