2 seabass of 600/700 gr
Salt
3 potatoes
1 jar of Pumpkin and Ginger Soup with Truffle 260 gr
1 jar of Tuscan Artichokes in oil 180 gr
1 jar of Dried Tomatoes in oil 160 gr

Seabass Roll with Artichokes and Dried Tomatoes on a Bed Potato Cream and Pumpkin & Ginger Soup with Truffle

PREPARATION

Fillet seabasses, open them like a book and place, at the center of them in length, some julienne artichokes and tomatoes, and season with salt and chives.
Make the rolls with the fillets and place them in a baking pan.
Separately, boil potatoes, and once cooked, mashed them and add some Pumpkin and Ginger Soup with Truffle. Once cooked the rolls of seabass, serve them with the potato and pumpkin cream, prepared before.
Decorate it with some Pumpkin and Ginger Soup with Truffle drops, Dried Summer Truffle in Powder and Slices. Delicious served it also with sea fruits stew.

1 barattolo di carciofi sott’olio 280gr
1 barattolo di Pomodori secchi 170gr
3 patate grosse
100gr di Vellutata di Zucca e Zenzero al Tartufo
Tartufo estivo liofilizzato in fette
Germogli a vostro gradimento

ARTICHOKES AND DRIED TOMATOES SALAD, PUMPKIN AND GINGER SOUP WITH TRUFFLE

PREPARATION

Drain the artichokes and dried tomatoes from their preserving oil and cut them by length. Separately, cook the potatoes in boiling salted water; once ready, crush them with a fork (the texture should not be too fine), then whisk them together with pumpkin, and ginger with truffle.
Make some quenelles of potatoes with pumpkin, and ginger with truffle to decorate the plate together with artichokes, tomatoes and Dried Summer Truffle slices to give the dish a crispy note and finally serve with fresh shoots.
Add some dried fruit, if you wish!

Slecktia Tartufi Ricette

INGREDIENTS FOR 4 PEOPLE

2 Eggs
200 gr of semolina pasta
100 gr of porcini mushrooms
5 potatoes
1 leek

Ravioli with Porcini mushrooms on potato cream and saffron with Truffle

PREPARATION

Make pasta in the traditional way and lay it thinly. Cut the pasta with a food ring of 8cm.
Mix cut and minced fresh porcini mushrooms with one boiled potato until it discards. Prepare the ravioli using these two ingredients and boil them for 5 minutes.
Peel and mince the rest of the potato and cook them with leek in a casserole, using water or vegetable broth for about 20 minutes.
Mix it to get a cream and place the ravioli above it and dress them with extra-virgin oil and a final sprinkling of truffle.

INGREDIENTS FOR 4 PEOPLE

400 gr Egg Tagliolini
200gr Butter
40gr Truffle

Truffle Tagliolini

PREPARATION

While noodles are cooking in salted water, put the butter in a pan and let it melt in bain-marie without putting it in contact with the flame so that it remains creamy. To flavor grate a part of fresh Truffle and add a teaspoon of “Truffle Cream”.
Stir-fry at end the tagliolini in a pan and shake them quickly so you can stir them . Finally, sprinkle with a generous grated fresh Truffle.
